Have you ever noticed you’re starving in the morning after a smoothie even when it’s packed with protein powder? Same. I usually need solid food to get going for the day. My go-to lately: personal pancakes, since Nancy and Alexandria, our chickens, give us eggs every day now (thanks, ladies!).

Recipe: Eggy Personal Pancakes

For breakfast, second breakfast, lunch, snack, whatever.

Ingredients
1 egg
2 tbsp oat flour (this is literally rolled oats ground up in a spice grinder; I like the nuttier taste/extra bit of fiber compared with all-purpose flour)
Dash of monk fruit sweetener (if straight sugar doesn’t bother you in the morning, go for it)
Dash of cinnamon

Make it
Put a small nonstick pan on the stove at medium-high heat. While that’s heating, crack an egg in a measuring cup and whisk it until fully even. Add the dry ingredients and mix until blended. Pour a small circle of batter onto the saucepan. Flip when it’s no longer oozing around (this won’t take more than a minute, so pay attention; I like picking up the pan and tilting it to test). Let sit another 15-30 seconds. And make two more! I like mine with a drizzle of maple syrup.
