Although most of Sunday spit out freezing rain in Charlotte, we made a simple, fun “snow” day out of it. Our Great Pyrenees pups always thrive in cold weather, so they had a blast romping in the backyard. We also took them for a walk in a field near our neighborhood, to stay out of the icy streets and to give them some extra play time.

Rémy and I got some stuff done around the house, but mostly enjoyed a day with no plans and nowhere to be. Lots of hot tea and hot chocolate and reading and binge-watching “The Sex Lives of College Girls.” We’ve been getting more of a kick out of that show than we expected. It’s pretty clever comedy writing.

To round out the day with an easy, hot dinner, Rémy threw together a one-pan, plant-based meal.

Recipe: Spicy Italian “Sausages” & Veggies

🌱Ingredients
Hot Italian Beyond Meat Sausages
-Cauliflower florets
-1 Zucchini
-2 Red jalapeños
-Spicy Italian Sprinkle from Trader Joe’s (or other type of Italian seasoning)
-Pecorino Romano
-Olive oil
-Salt

Easy Recipe Spicy Italian Sausages and Veggies with Beyond Meat

Make It:

Drizzle olive oil on a large pan. Add a dusting of salt. Add the jalapeños, sliced zucchini, cauliflower and sausages. Drizzle more olive oil over top and add the Sprinkle seasoning.

Bake in the oven at 400 degrees F for about 35 minutes.

Serve with Pecorino Romano (like a little snow dusting!). We also had leftover milk bread from Saturday date night at Kindred, so we toasted that on the side as well. Perfectly spicy way to wrap up the snow day.
