I haven’t been in an office routine since the start of COVID, which also means I haven’t been in a breakfast–on-the-go routine in just as long. I hadn’t thought about it until I went straight from yoga to the office the other morning. I had packed everything I needed except breakfast, so I stopped at the grocery store on the way and grabbed a Greek yogurt, protein granola and a protein bar so I could figure it out when I got to the office. The yogurt was tiny, so I ended up feeling snackish for the protein bar later. Not super satisfying overall.
So here I am trying not to default to grocery store runs and processed protein bars when I could save time and increase satisfaction with a little prep the night before a morning at the office.
As an active person, my goal is always to be aware of protein intake in the morning for muscle recovery, while being mindful of adding carbohydrates for much-needed fast energy. Especially after a yoga practice or workout, to replenish the energy I’ve used up. This recipe gives you about 30 grams of protein.
This breakfast protein parfait takes just a minute or two to make, stores well in an airtight mason jar in the fridge overnight, and is easy to keep in a cooler bag in the car while you’re commuting. The point here is: Healthier doesn’t have to mean harder. Make something convenient!
Bonus: I use frozen berries so there’s no race to use produce before it goes bad. The granola stays pretty crisp, too.
6-Ingredient breakfast protein parfait recipe
Make it in one minute to save time and boost energy during the work day.
🌱Ingredients
1 tbsp Hemp seeds
1 tbsp Chia seeds
1 c. Vanilla Greek yogurt
⅓ c. Peanut butter protein granola (I like the Trader Joe’s or Kind brands)
1 Handful of frozen blueberries
1 Handful of frozen raspberries
Make it
Add a layer of Greek yogurt to your mason jar. Toss in the blueberries. Add another layer of yogurt. Toss in the raspberries. Add the last layer of yogurt. Top with hemp and chia seeds. Add the granola, so it sits on top of the seeds to stay dry. Seal your jar with a plastic or metal lid. Store in the refrigerator overnight, and in a cooler bag with a freezer pack during your commute. Grab a spoon when you’re ready.
