Sunday was a day of errands, house cleaning, yoga and dog-park festivities. So we were in the mood for a simple dinner: Chicken Caesar Salad.

Our fridge was already filled with lettuce from our weekly Hungry Harvest delivery, but we grabbed chicken, Everything but the Leftovers Seasoning and Corn Chip Dippers from Trader Joe’s for the salad. Plus a thousand other items for the week. You know how Trader Joe’s trips go.

Since we didn’t have any eggs from the coop left (I ate them all during the week), Rémy tossed together a quick and easy version of Caesar salad dressing for our casual dinner. Meanwhile, I opened a bottle of red wine.

Recipe: Rémy’s Quick and Easy Caesar Salad Dressing

Yields about 1 c. dressing, total.

Ingredients:

  • 1 Large clove of garlic, finely minced
  • ¼ c. Sherry vinegar
  • 1 tsp. Kosher salt
  • 1 tsp. Black pepper, freshly ground
  • 1/4 c. Duke’s Mayonnaise
  • 1 tbsp. Dijon mustard
  • ½ tsp. Anchovy paste
  • ½ c. Extra virgin olive oil
  • 4 oz. Pecorino Romano cheese, hand-grated

Make it:

Whisk everything but the olive oil and cheese together in a bowl, until all mayo is clearly combined with the vinegar. Drizzle in the olive oil while continuing to whisk. Continue until everything is emulsified. Mix in the cheese, and you’re done!

Rémy assembled the salad with chopped Romaine lettuce, chicken breast seasoned with Trader Joe’s Everything but the Leftovers Seasoning and olive oil, and Trader Joe’s Corn Chip Dippers as croutons.
